 Initially I intended a tribute to Edward Weston, but I couldn't find an interesting enough pepper. I do like the way you can't tell if it is green or red. It is red, btw, it gave a better contrast of the stem against the body.
Most of the adjustments to this image were in Lightroom, converted to grayscale, cropped, adjusted exposure, black level, brightness, and clarity. In PE, I just did save for web.

The stem and the pepper are similar shades of gray. Different shades (possibly obtained through a different black and white conversion?) might have added some interest to this shot.

I like the way the skin on these looks when the color is removed - allows you to focus on the texture of it. Could be red, could be green, doubt it's yellow (due to the contrast of the stem). For a slightly more dynamic image, you could try setting the stem at an angle when you compose the shot.
