Tomato and Cucumber Salad
3 ripe tomatoes
1 medium size cucumber
½ large red onion
1 green pepper
baby romaine lettuce (optional)
½ cup Kalamata or other olives
125 grams feta cheese, cut into cubes
Dressing:
2 tablespoons extra virgin olive oil
3-4 tablespoons fresh lemon juice
1 tsp fresh mint leaves, chopped finely
2 tbsp fresh oregano leaves, chopped
1 tsp fresh dill, chopped finely (or ¼ tsp dried)
1-2 cloves garlic, minced
freshly ground black pepper to taste
Cut tomatoes into large cubes. Cut the cucumber into lengthwise quarters and then slice into chunks. Slice red onion thinly. Clean seeds and stem from green pepper and cut into strips. Place all vegetables into a large bowl. Place all ingredients for dressing in a small jar with a tight fitting lid. After sealing lid, shake briskly to combine ingredients. Pour over vegetables in bowl. Toss to coat all vegetables. Let marinate for 45 minutes. Add feta cheese, olives and lettuce if you are using it. Toss gently and serve.

| Interesting title considering all the other ingredients here ;) There's not much going on for me here. No focal point. Too busy. Poor lighting. |

| yummy food, but the purpley light glare on the tomatoes is a bit distracting. |
