 This is my Mom's Blueberry Muffin recipe that she's made for as long as I can remember. It's one of the few recipes I've been able to modify to gluten-free successfully.

1 1/2 c. gluten free all purpose flour (I use Gluten Free Girl's flour recipe)
1 1/2 tsp psyllium husks
1 1/2 tsp baking powder
1/4 tsp salt
3/4 tsp cinnamon
1 egg
6 TBSP butter
1/2 c. - minus 3 Tbsp milk
1/2 c. maple syrup
2 c. blueberries

Preheat oven to 350ºF. Mix all the dry ingredients well. Add in the wet ingredients, mix until combined. Fold in blueberries. Line muffin pan with baking papers. Fill muffin cups 1/2 way. Bake for 25 minutes.

Wow! this is super exciting to be in the top 5 on the heels of winning a blue. I am honored as I know the caliber of photographers in this group is amazing!!! You guys know how to make a hobbyist photographer feel good. Still Life is a category that is NOT my favorite so making the top 5 with a genre that I struggle with is even better. Thanks so much for all the kind comments, and votes!
