 very quick and easy and refreshing
ideal for a BBQ buffet

1/4 watermelon cut into squares
1 cucumber, peeled and cut into squares
200g Feta cheese (mild greek sheep cheese) cut into squares

arrange in container
add 2-3 teaspoons of lemon juice
add salt and pepper
and a generous dash of olive oil

My receipe says you should sparkle some basil over the salad - I always take fresh (not dried!) peppermint which makes the salad even more delicious for a hot summer evening. You can try both and add it to your taste
