I made stuffed chicken and a side of asparagus. I borrowed from some one's post on here. The chicken has spinach leaves, bacon, mozzerella and asparagus in it. A little basil on the outside and in the oven it goes. The Asparagus was fixed in a large pan with oil, basil, spinach leaves, portabella mushrooms, and some minced up garlic. It took about an hour and a half @ 350-375 for the chicken to get done.

I'll hafta remember that one for when the weather is cooler. I refuse to turn on the oven during the summer months.
I made up a delectable salad the other night:
red leaf lettuce
parsley
1 black plum
2 slices of watermelon
a teeny bit of yellow bell pepper
bleu chz crumbles w/ cranberries
seared ahi
and Briana's Bleu chz dressing
Another easy one with fruit is:
grilled chicken breast
grilled peaches
on crusty french bread with sliced havarti

wonderful photo series...I'm just glad it didn't continue into what it's like today lol ;)
Looks like a great meal, I can't wait to get back to the real world where I can cook and bake again. |
