How about taking pictures of what's going on behind the main event?
Backstage at a concert.
Mall Santa's breakroom.
A shot of the photographer from the subject's viewpoint.
The stockroom of the grocery store.
The kitchen of a restaurant.
A TV's insides.
I don't know what you would do for a sunset.
Any other thoughts?

For the sunset - get a shot of people taking pictures of it, but with some trace of the sunset visible.
Mailroom at a large office, or the executive suite.
A bakery operation,
An auto repair bay,
Someone stocking shelves or cleaning up at a grocery or department store (but be careful at Walmart, they might think you're INS),
Locker room pep-talk,
etc.?
