I know that lense hoods help with contrast, but whats the difference between most of them. I have a canon EOS10D and looking for lense hoods for my lenses for sporting events. I am also want to get into portraits.

You want to use the longest hood that won't cause vignetting (darkening of the corners of the pic) at the widest focal length of the lens. Usually, the manufacturer's hoods are good choices. With 1.6-crop cams, it's sometimes possible to use a longer hood, since you aren't worried about the far corners of a full frame. That's taking things to the extreme, however.
Aftermarket (screw-on) hoods can be used, but then you need to screw any filters in fornt of or behind the hood, which is not nearly as convenient.

I got a kick @ss screw in hood for a few bucks off Ebay. It is threaded on both ends so I can put a cap on it, and it's rubber. It folds all the way back so you can shoot with no hood, or you can pull it part way for wide shooting and all the way for telephoto.

The flower lens hoods work well too because you can rotate them to get exactly what you want.
