My guess: "formal" boxing derived from more ad hoc situations where the "spectators" formed the boundary of the conflict zone, "ringing in" the fighters. When the hardware was introduced the terminology was kept.
FWIW in Sumo the fighting area is round, in the current mixed-martial arts competition they use an octagon.
Also, as a practical matter, there is no way to stretch ropes into a perfect circle without an infinite number of anchor ropes/points ... |

Plus, here's the relevant definition for "ring": an enclosed space, typically surrounded by seating for spectators, in which a sport, performance, or show takes place. |
